I see that there can be three lines of code for a particular entity. When do we use each one? I think the third line (" " for example) is related to ASCII but not sure about the others.

231,248 PointsI'd generally just use the first one shown, I think the others exist primarily for compatibility.
But always test to be sure it displays correctly in the browser, try one of the others if you have trouble. I've occasionally had to use a number (the shortest one, usually the decimal) when the named one didn't display.
