This was planned to be in the WooCommerce course coming out in a couple weeks, but it turned out to be too much and is being put into it's own course on WooCommerce Theme Development just like you're hoping for :)
The course that is coming out in a couple weeks though has an extended bonus video that shows you how to start customizing WooCommerce template files.
