How did he know to place planet.name inside like this ${planet.name}

Also how did he know where to start and end template literals

The "$(...)" syntax creates a replacement token in a template literal. The entire thing gets replaced by the value of whatever is inside the braces.

And when replacing a concatenation sequence, the template literal starts where the first string (or value) started, and ends where the last string (or value) ended.
