Need Help with Genesis WP Tweak

Any help is greatly appreciated! This has been a tough one for a personal project. I need a WP Guru to help please!!

Info. About My Site: The Functions.php page will need to be tweaked... Genesis Parent Theme Minimum-Pro Child Theme

Problem: I'm trying to dynamically populate a Tag Cloud with all Tags from only one Category. If tags are added or subtracted from that one Category, then I want the Tag Cloud to reflect that and be current all the time.

I've used the Plugin: Ultimate Tag Cloud to manually exclude certain tags from other categories, but this isn't a real solution because I want the Tag Cloud to always show the current, complete list of tags for this single Category.

Can someone give me a suggestion on how to accomplish this within Genesis and Minimum-Pro themes?
