Does anybody know what steps need to be taken to move this to PHPMyAdmin rather than SQLite?

The zip file download included with the videos contains a .sql file which you can import into phpmyadmin. Once you execute the sql file it should create the database and all the tables populated with the data.
The first video in this course has some instructions in the Teacher's Notes.
