If there is a concept, technique or something that is confusing to me or that I think I may need to go back to I will download the video and the transcript. They can also be helpful for the quizzes and challenges -- open the transcript and ctrl-f the term or phrase I'm looking for.
I also constantly take notes and save them in the project/course folder I create. Sometimes I write them in Markdown format though I also have a couple of handy little snippets for Sublime Text which incorporate Emmet shorthand for creating quick wiki style HTML, such as lists and definitions.
