Wordpress editing

I have done numerous wordpress course both online and classroom. Some tutors suggest that its so powerful that there is no need to manipulate the PHP at all. Can you create complex websites with thousands of pages just using the back end of wordpress and not changing the PHP or stylesheet.css?

It's possible, depending on what theme you choose. If you're making a project on that large of a scale, though, you should probably design your own theme.
